The following information is from our Nutrition Marketing Specialist:
“Cabbage is a low-calorie, nutrient-dense vegetable packed with vitamins, minerals, and antioxidants. It is an excellent source of vitamin C, which supports immune health, and vitamin K, which plays a role in blood clotting and bone strength. Cabbage also provides a good amount of fiber to aid digestion and promote fullness, along with small amounts of folate, manganese, and vitamin B6.”

“Its phytonutrients, including glucosinolates, have been studied for potential cancer-protective effects. Red and purple varieties are especially high in anthocyanins; plant compounds linked to reduced inflammation and improved heart health.”

“With its low cost per pound and a longer refrigeration shelf life compared to other leafy greens, it is a simple, affordable cruciferous vegetable that can be eaten alone or incorporated into soups, salads and casseroles. Whether eaten raw, cooked, or fermented, or added to other recipes for a stealthy health boost, cabbage is a versatile and highly nutritious addition to the diet.”
