For the last week of Sweet Potato Month, we are giving you a sweet and easy dessert recipe.
So why do we take a month to celebrate sweet potatoes? Not only are they delicious and packed with vitamins and nutrients, but North Carolina ranks no. 1 in the country for sweet potato production and produces more than half of the nation’s supply.
Ann Farrell, a member of the Golden Age Club in Apex, was sweet enough to share the recipe below. She says that it is a favorite of her family, especially her great grandson.
Sweet Potato Pudding
Cook Time: Prep time: 20 minutes; Total time: 50 minutes
Meal Type: Side Dish
NC Ingredients: Sweet potatoes, eggs, pecans
For the pie:
3 cups cooked sweet potatoes
1/2 cup sugar
1 can sweetened condensed milk
1/2 cup margarine or butter, melted
1 teaspoon vanilla
1/2 teaspoon cinnamon
For the topping:
1 cup packed brown sugar
1 cup pecans, chopped
1/3 cup butter, softened
1/2 cup flour
Mix potatoes with remaining ingredients. Then combine topping ingredients with a fork.
Spray a 9 x 13 baking dish with cooking spray. Pour ingredients into your dish and sprinkle the topping on top. Bake at 350 degrees for 30 minutes or until set.
