Recipe: Chicken and Waffle Bites

by | Jan 17, 2019

It’s hard to go wrong with a good chicken and waffles recipe, but especially this one. We recommend setting this idea aside for an appetizer for a game or any weekend brunch plans.

North Carolina ranks 7th in the U.S. in chicken production with nearly five percent of the nation’s supply. Our state is responsible for about $4.7 billion in poultry cash receipts.

1⁄3 cup Mustard (Maple Honey Mustard Ingredients)
1⁄3 cup maple syrup (Maple Honey Mustard Ingredients)
1⁄3 cup honey (Maple Honey Mustard Ingredients)
1 chicken breast, cut into bite-sized pieces (Chicken Ingredients)
1 teaspoon Salt (Chicken Ingredients)
1 teaspoon Pepper (Chicken Ingredients)
1 teaspoon cayenne pepper (Chicken Ingredients)
1 egg (Waffle Ingredients)
3⁄4 cup whole milk (Waffle Ingredients)
1 teaspoon vanilla (Waffle Ingredients)
2 1⁄2 Tablespoons oil (Waffle Ingredients)
1 cup flour (Waffle Ingredients)
1 1⁄2 teaspoons baking powder (Waffle Ingredients)
1 Tablespoon sugar (Waffle Ingredients)
Pinch of salt (Waffle Ingredients)

Mix mustard, maple syrup and honey together in a small bowl, set aside
Prepare the chicken, season and set aside.

Waffles: Combine the wet ingredients in a mixing bowl. In another mixing bowl, sift together the dry ingredients. Add the wet to the dry and mix until smooth. Add the seasoned chicken to the waffle batter. Make sure the chicken is coated in the batter. Heat your waffle iron on the lowest setting. Spoon a piece of chicken and additional batter into each section. Cook on the lowest setting for approximately 7-10 minutes.

Makes 14 waffle bites

Serve with maple honey mustard dipping sauce.
