Here’s what’s on the agenda:

  • Roland McReynolds, executive director of the Carolina Farm Stewardship Association, will talk about the importance of small farms using training collaborations so they can comply with new federal food-safety rules.
  • Chuck Ross, director of extension for the University of Vermont, will give an update on implementation of those federal rules, which are the result of the Food Safety Modernization Act.
  • In addition, Dr. Steven Taylor, founder of the food allergy research program at the University of Nebraska, will talk about incorporating allergen controls in food-processing facilities.
  • And Dr. Clint Stevenson, assistant professor of food science education at N.C. State University, will demonstrate how he brings the food processing plant into the classroom using virtual reality training.
