This week’s recipe continues a month of recipes featuring N.C.-grown sweet potatoes. Sweet potatoes are high in fiber and Vitamin C and are healthier than white or yellow-skinned potatoes.
Lee Farms in Four Oaks shared this muffin recipe and they are perfect for any meal. Lisa notes that “these have so many possibilities. Delicious plain or turn them into little sandwiches with country ham or cream cheese and preserves. You can go sweet or savory with these muffins.”
