WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina. This week’s recipe continues a month of recipes featuring N.C.-grown sweet potatoes. Ninety percent of sweet potatoes grown in North Carolina are the Covington variety, which was developed on research stations operated by the NCDA&CS in partnership with N.C. State University.
This week’s recipe is a savory soup that combines sweet potatoes with tomatoes. Lisa notes that “this soup is perfect year round. Enjoy it warm when the weather is cool and then chill this soup when the weather is warm. Serve with croutons or a grilled cheese sandwich.”
