WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.
Lisa and Brian make a homemade poppy seed dressing to add to a salad that uses fresh kale instead of lettuce for a great weeknight dinner. Brian topped their salads with chicken breast, tomatoes, bacon, strawberries, mandarin oranges, pecans and avacodos. The poppy seed dressing is easy, and made with only four ingredients, plus salt and pepper to taste.
Lisa says her husband and son love this salad. Spring kale is tender and adds new texture, flavor and nutrition to the salad routine.
