Strawberries are starting to appear in the eastern and central part of the state, and this simple recipe is a great way to take advantage of the fresh strawberries. Brian and Lisa say this is a great recipe for entertaining.
The Berry Tartlets use 2 pints of sliced berries, less than a cup of sugar, a little cornstarch and some water, plus unbaked pie crusts. You can garnish with whipped cream and blueberries for a festive, patriotic dessert. Lisa says ripe strawberries at room temperature will juice easier and produce more liquid.
North Carolina is the fourth-largest producer of strawberries in the nation with 1,500 acres harvested annually. Many families choose to harvest their strawberries by hand at pick-your-own farms across the state. N.C.
