WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.
This week, Brian and Lisa make sweet and simple Almond Rounds. Start by combining butter and sugar in a large mixing bowl until it’s light and fluffy. Next, add egg yolks, ground almonds and almond extract. In a separate bowl, combine flour, baking powder and salt. Gradually add the dry ingredients to the dough.
Place half of the cookie dough on waxed paper and shape it into a roll. Do the same with the other half. Cover both with freezer wrap and stick them in the freezer. Lisa says the best part of this recipe is that you can make the dough ahead of time. This will save you time if you have multiple desserts to prepare for Easter or another special occasion.
When you’re ready to bake, pull the dough out of the freezer and cut the rolls into 1/4 inch slices. Bake the dough at 350 degrees for 12 to 15 minutes, or until golden brown. You can serve them plain or top them with a drizzle of dark chocolate. Check out the video above for Brian’s tips on “flinging” chocolate on the cookies.
