In the Kitchen with Brian and Lisa: Butternut Squash Soup

by | Feb 14, 2013

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

This month, Brian and Lisa are cooking up some soup recipes your family is sure to enjoy. Up first is a Butternut Squash Soup made in a slow cooker. This rich and creamy soup combines butternut squash, apples and onions with coconut milk, curry and spices. Check out the video below for steps to make this one-of-kind winter soup.

To make your job easier, Lisa recommends putting your butternut squash in the microwave for 3 minutes before peeling. She also recommends selecting a heavy squash with a hard rind. Butternut squash and other winter vegetables are available at farmers markets across the state. To find a location near you, go to www.ncfarmfresh.com.
