North Carolina is the second-largest hog producer in the country, and because of that, there’s an abundance of great pork recipes in the state. This one for Spicy Barbecue Pork comes from Kay Powell in Fuquay-Varina. Kay’s recipe calls for a three-pound pork tenderloin roast, but what really sets the dish apart is her spicy sauce. The sauce is made with vinegar, ketchup, brown sugar, honey-barbecue sauce, mustard, olive oil, Worcestershire sauce and crushed red peppers.
