In the Kitchen with Brian and Lisa: Grilled Apple Salad

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

Many people think salads are just for summer months, but this delicious mix of grilled apples and mixed greens is perfect for fall. Top it off with a brown sugar and cider vinaigrette, and you’ve got a wonderful cool-weather meal or side dish.

Start by slicing four N.C. apples crosswise to form one-fourth inch rings. Grill the rings for 2 to 3 minutes, or until crisp. Arrange spinach and mixed greens on a plate and top with the apples, as well as white cheddar cheese and toasted N.C. pecans.

Serve the salad with a brown sugar and cider vinaigrette. Make the vinaigrette by whisking together canola oil, apple cider vinegar, green onions, light brown sugar, fresh basil, Dijon mustard, crushed red peppers and salt.
