Here’s another great shrimp recipe to enjoy at your upcoming Labor Day cookout. Lisa borrowed the recipe from her sister Michele and added fresh N.C. shrimp for an added layer of flavor. She says it’s great as an appetizer, side dish or just a snack between meals.
To make the dish, combine a half pound of cooked N.C. shrimp with mozzarella cheese and grape tomatoes. Drizzle the mix with good-quality olive oil and season with salt and pepper. Finally, add some saltine crackers and serve.
