In the Kitchen with Brian and Lisa: Clare Turner’s Shrimp Casserole

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

If your children refuse to try seafood, Lisa recommends this dish as a delicious option to change their minds. In a mixing bowl, combine a pound of cooked N.C. shrimp with onions, salt, pepper, garlic powder, rice, lemon juice, mushroom soup, sliced mushrooms and pimentos. Add sour cream and mix well. Pour all the ingredients into a well-greased baking dish and bake at 350 degrees for 30 minutes. Sprinkle grated cheese on top of the casserole and bake for an additional 10 minutes.
