Lisa describes this recipe for Cucumber Feta Salad as delicious and fresh. It’s a great recipe for your homegrown cucumbers and would go great with grilled kabobs. To make, start by seeding and cubing a large cucumber. Combine the cubes with crumbled feta cheese, extra-virgin olive oil, dill and lemon juice. Season with salt and pepper. Before serving, sprinkle the top with thin strips of lemon zest.
