In the Kitchen with Brian and Lisa: Zucchini Chips

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

This month, Brian and Lisa are cooking up some delicious recipes for all that summer produce coming off the vine. This week, the duo serves up Zucchini Chips, perfect as an appetizer or side dish.

To make the chips, first dredge zucchini slices in a mixture of flour and buttermilk. Then, coat the slices in a mixture of bread crumbs, Parmesan cheese, pepper and salt. If you like things spicy, add a little cayenne pepper into the dry mix. Spread the breaded zucchini on a baking pan and place in a 425-degree oven for 30 minutes, flipping the zucchini over halfway through baking. Finally, sprinkle with salt and serve with Ranch dressing.
