This week, Brian and Lisa whip up a quick-and-easy egg salad recipe from Lisa’s parents. This egg salad is made by combining six hard-boiled eggs with mayonnaise, yellow mustard and apple cider vinegar. Serve the egg salad between two slices of your favorite bread, or on a cold plate with chicken salad and tuna salad. Lisa says a hard-boil egg will last for about a week in the refrigerator, so you can cook the eggs ahead of time and use them as needed.
Here’s a fun tip: Lisa recommends buying the oldest eggs you can find in the store. Older eggs tend to be easier to peel after you hard boil them.
