If you’re not in the mood for corned beef and cabbage this St. Patrick’s Day, try this flavorful award-winning recipe from Gail Fuller of Raleigh. Fuller took home a blue ribbon in last year’s Incredible Edible Egg Quiche recipe contest at the N.C. State Fair for this dish, which is a new spin on the Southern classic Shrimp and Grits.
To make this dish, start by preparing a crust made of instant grits, egg and seasonings. Bake the crust and fill with bacon, shrimp, sausage, onion and cheese. Next, combine four eggs, some half and half, parsley, garlic, Old Bay seasoning, celery seed, salt and pepper in a small bowl. Finally, pour the egg mixture over the crust and bake in the oven. The end result is something unique and delicious.
