If you’re looking for a way to mix up your weekend brunch, try this recipe for Sweet Potato Biscuits. The biscuits are prepared in the same way as other homemade biscuits, but Lisa adds a cup of mashed sweet potatoes to the bowl. The sweet potatoes add a touch of sweetness and extra moisture to the biscuits. You shouldn’t have a problem finding locally grown potatoes for this recipe because North Carolina is the top producer of sweet potatoes in the nation.
Lisa recommends serving the biscuits with a thin slice of country ham. You also can cut the dough into smaller biscuits and serve them as an appetizer at your next party.
