In the Kitchen with Brian and Lisa: Sausage and Tortellini Soup

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

This quick and easy soup recipe is sure to be a hit on cold winter nights in the future. Start by cooking some Italian sausage in a large stockpot. Next, add mushrooms and saute the two together. Then, add a package of spinach and cook the soup until the spinach is wilted. After adding some diced tomatoes and chicken broth to the mix, combine a bag of prepackaged tortellini. Finally, simmer the entire pot for 10-15 minutes and it’s ready to be served. Lisa recommends garnishing the soup with Parmesan cheese and serving it with a slice of thick French bread.
