In the Kitchen with Brian and Lisa: Roast Pork with Bacon Jam Glaze

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

As we ring in a new year, let’s celebrate with a recipe featuring one of our favorite commodities – pork. Jennifer Huntington of Raleigh took first place for this recipe in the 2011 Bacon! Tarheel Pork Challenge at the State Fair. The dish is a sweet and savory combination of pork and bacon.

Start by baking a half a pound of bacon in the oven. Next, set the bacon aside and use a portion of the bacon fat to saute onions, garlic and brown sugar together in a pan. Add apple-cider vinegar and maple syrup to the mixture to create a thick glaze. Then, pulse the glaze combination with the cooked bacon using a food processor. Finally, use the bacon glaze to coat a two-pound pork loin, and bake the pork until it reaches 145 degrees. Let it rest for three minutes and serve.
