In the Kitchen with Brian and Lisa: Bang bang oysters

by | Oct 13, 2011

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

Like bang bang shrimp? Then you’re sure to like Brian and Lisa’s bang bang oysters. Fall is the perfect time to buy N.C. seafood, so it’s appropriate that the pair will be devoting the month of October to recipes with ingredients fresh from the N.C. coast. This recipe has two parts – a sauce and a batter. The sauce features mayonnaise, salt, water, honey and Asian sauce, and the batter is a simple combination of flour, cornstarch, eggs, salt and pepper.

After battering the oysters, fry them and drizzle with the sauce. Then, place them over lettuce and garnish with scallions. The dish is perfect for an appetizer, but also works well as an entree. If you’re not a big fan of oysters, N.C. shrimp work just as well.

You can find ingredients for this recipe at farmers markets and roadside stands across the state. To find a location near you, go to www.ncfarmfresh.com. For the best quality local seafood, make sure you buy in season. You can find out what seafood is currently in season using the seafood availability chart created by the North Carolina Sea Grant.
