In the Kitchen with Brian and Lisa: Vegetarian PB&P Smokey Mac & Cheese

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

The N.C. State Fair is just one month away, and Brian and Lisa are celebrating with a month of blue-ribbon recipes from the 2010 State Fair specialty cooking contests. This week’s recipe is from Domino Ireland, who took home the blue ribbon in the N.C. Peanut Growers Association contest with his twist on macaroni and cheese. Ireland’s recipe for Vegetarian PB&P Smokey Mac & Cheese features peanut butter, peanuts, smoked Gouda, smoked cheddar, goat cheese, cream cheese and heavy cream in a decadent side dish.

You can find more information about the 2011 specialty cooking contests on the State Fair website. The entry deadline is Oct. 7. The N.C. State Fair will be held at the N.C. State Fairgrounds Oct. 13-23. Discount tickets are available online now through Oct. 13. Adult tickets are $6 in advance, $8 at the gate. Children’s tickets are $2 in advance or $3 at the gate. Children 5 and under and seniors age 65 and older get in free. Ride sheets also can be purchased in advance for $10 for a sheet of 18 tickets.
