WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.
If you have an abundance of squash in your summer garden, and aren’t sure what to do with all of them, try this recipe for squash soup. The recipe calls for 1 1/2 pounds of squash, and also features onion, lemon, heavy cream and nutmeg. Lisa says you can serve the soup warm or cold, and she also recommends pouring the mixture over your favorite pasta.
Squash and other summer produce are available at local farmers markets and roadside stands. To find a location near you, go to www.ncfarmfresh.com.
