North Carolina farmers markets are full of two crops in August – watermelons and tomatoes. This recipe for watermelon salad combines the two in a summer side dish perfect for a backyard barbecue or dinner with friends. To make the recipe, first cut and mix watermelon cubes, tomatoes and onions together in a bowl. Next, prepare a simple oil-and-vinegar dressing and coat the salad. Finally, top with feta cheese and serve. Lisa also recommends topping the dish with mint for an added burst of flavor.
