Brian and Lisa continue a month of recipes inspired by the sea with this one for shrimp pizza. The recipe, featuring fresh N.C. shrimp, pesto sauce and mozzarella cheese, is a simple solution for weekends at the beach.
You may find it easier to purchase pesto sauce at the grocery store, but try Lisa’s recipe for homemade pesto if you have time. To make the sauce, combine the following ingredients together in a food processor and pulse until mixed:
- 3/4 cup, fresh basil leaves
- 1/4 cup, fresh parsley leaves
- 2 garlic cloves, coarsely chopped
- 1/4 cup, grated Parmesan cheese
- 1/2 cup, olive oil
- 2 tablespoons, pine nuts
- Salt and freshly ground black pepper
