If you don’t have this specialized appliance, you also can use a griddle or large skillet. If you’re really in a pinch, you can try Brian and Lisa’s creative method for making these delicious grilled sandwiches using a pan, a brick and a plate. The sandwiches feature fried summer squash and zucchini, roasted red peppers, red onions, goat cheese and pesto. The recipe makes a satisfying sandwich.
