To prepare the asparagus, snap off the ends and steam the stalks in a bath of olive oil and water. The cheese topping is made by melting sharp cheddar cheese and a cheese of your choice into heavy cream, then adding dry mustard, garlic and pepper to the mix. The dish works well with any meat, and would be an easy addition to your weekend cookout plans.
