WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.
In March, Lisa and Brian will prepare a series of chicken recipes for In the the Kitchen. The first chicken recipe to fly out of the coop is for chicken parmesan and comes from Ina Garten’s Barefoot Contessa Family Style cookbook. Garten’s recipe tops the traditionally breaded and pan-fried chicken with a mixed green and lemon vinaigrette salad. According to Brian, the lemon adds a tangy flavor to the richness of the breaded chicken.
