In the Kitchen with Brian and Lisa: Beef soup with brown rice

by | Feb 10, 2011

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina.

During February, Brian and Lisa will cook up some delicious recipes featuring N.C. beef. They start things off this week with a warm and comforting beef soup with brown rice. It’s a great way to use leftover beef and features mushrooms, onions and a little red wine. The recipe makes enough soup for two, but you can easily double it to feed a larger group.

There are more than 360,000 beef cows in North Carolina, and many ranchers sell directly to consumers. To search for a farm, farmers market or roadside stand carrying N.C. beef, go to www.ncfarmfresh.com. You also can find links to other beef recipes, nutritional information and educational materials at the N.C. Cattlemen’s Beef Council website.
