In the Kitchen with Lisa and Brian: Cucumbers and Onions

WRAL reporter Brian Shrader and our own Lisa Prince feature seasonal recipes in their Got to Be Good Cookin’ segment using ingredients grown and available right here in North Carolina. We’ll post each video here, along with links to the recipes.

This week, Lisa and Brian are still using N.C. vegetables to create easy and tasty recipes. You can watch the pair put together this no-cook recipe of Cucumbers and Onions in the video above. Here’s what Lisa has to say over on the Got to Be Good Cookin’ site:

This is always a quick, fresh side dish for any meal. My family likes to munch on this while I’m fixing supper too. Also, if you have extra cucumbers, this is a good way to use up a couple. Wash your cucumbers, cut of the ends and peel or scrape down the length of them with a fork. Slice and put in a bowl. Add sliced onion if desired. Add just enough vinegar to cover. Add salt and pepper and let them sit covered for about 2 hours in the refrigerator.
