This week’s recipe is a tasty and simple way to make use of the locally grown berries in grocery stores and farmers markets across the state. The cheese blintz ingredients are mixed in a blender and poured straight into a baking dish before being topped with a strawberry puree.
Lisa recommends using this recipe throughout the year by changing the topping seasonally. Many N.C. berries have a short growing season, so take advantage of local farmers’ harvests by buying extra berries and freezing them to enjoy this recipe all summer long.
